Vegan Curry with Rice Recipe on a budget

Happy first day of autumn. Are you ready for the cold season? I love autumn and winter can be nice but find it very hard to have these long and dark days…


Today I want to share with you this delicious and super easy curry recipe:

Ingredients

  • 100g wild rice
  • 200g tofu
  • 1 onion
  • 5 carrots
  • 2 red pepper
  • 5 mushrooms
  • 1 broccoli
  • soy sauce
  • curry powder
  • 1 can coconut cream
  • 10g peanuts

You will need 1 small and 1 big pot and a pan:
Add the rice to the small pot with double the amount of water and let it boil.
Cut the vegetables and start with the onion. Put oil in the big pot and add the onion. Once it is glaced add the carrots.
Cut and put the tofu in the pan.

Add the broccoli to the big pot and stir all vegetables together. Once the carrots are a bit soft, add the red peppers and mushrooms. Now pour the coconut cream over the vegetables and add some curry powder.  Cover the pot and let it boil until soft.

Keep stirring the tofu and cover it in soy sauce.
The rice should boil, the tofu gets crispy and flavorful and the vegetables are getting soft.
Once everything is done, you can serve with some crunchy peanuts.

The recipe is for 4 portions. Vegetables & rice are cheap ingredients. Tofu really depends but this meal is again less than 1€ per portion.
